Overall Goal
Convert the current restaurant into a multi-vendor food hall with:
- 2–3 hooded vendor pods located ONLY within the existing kitchen/hood footprint
- 2–3 front-of-house ventless vendor stalls
- An expanded central bar (to support 4 bartenders)
- Overhead liquor storage above the bar
- A merchandise kiosk
- Shared seating with event flexibility
- Removal of back office to gain BOH/prep space
- Optional removal of the small front restroom if code allows
Primary Design Constraint
- To control cost, we cannot add or relocate any hood.
- All hooded vendors must operate inside the existing kitchen and use the current hood system.
- All front-of-house vendors must be ventless/electric concepts.
SCHEMATIC FLOOR PLAN
DELIVERABLE
I am requesting one (1) revised schematic floor plan that includes:
1. Hooded Vendor Pods (Back-of-House)
Subdivide the existing kitchen footprint into 2–3 vendor pods
Ensure each pod can access the existing hood, gas, and plumbing
2. Front-of-House Vendor Stalls (Ventless)
Identify 2–3 stall locations in the dining area
Stalls must support light electric equipment only
Minimal MEP rework
3. Bar Expansion Plan
Extend bar counter
Add space for 4 bartenders
Add overhead suspended liquor storage
Add expanded backbar shelving
4. Seating/Event Layout
Flexible layout for shared seating and community events
5. Merch Kiosk
Small footprint near the entrance or main circulation
6. Demo Notes (High-Level)
Remove back office
Evaluate removing the front restroom
7. Circulation
Customer flow
Staff/BOH flow
Basic ADA & egress awareness
Important:
This is NOT a permit set and NOT a full drawing package.
I only need a clean revised floor plan that communicates layout and intent.
TIMELINE REQUEST
If possible, I would appreciate the schematic floor plan within 5–7 business days, or whatever
turnaround you can accommodate.
We are able to provide CAD Drawings and full permit drawings for the original space
